At Western Tiers Distillery, we believe great whisky should mirror the land that defines it. For five years, we have operated with a singular philosophy: patience over pace. We didn’t set out to rush the process; we set out to honour the long game.

The story in the spirit

To celebrate our five-year milestone, we looked for a spirit that captured this sense of "stillness and resolve." We found it in a single, exceptional cask; a Pedro Ximénez Sherry butt sourced directly from Spain.

Over years of quiet maturation, the lush, dark influence of the PX oak has breathed depth into our spirit. Like the lakes themselves, this whisky was shaped by time, drawing out layers of dried fruit and a grounded, rounded warmth. Bottled at a higher strength to preserve its genuine character, it is a marker of how far we’ve come.

The experience

Julian Lakes is an invitation to pause. It is a whisky that doesn’t demand your attention; it rewards it.

The Nose: A rich, inviting greeting of ripe figs, stewed raisins, and dark plum, all wrapped in a soft, honeyed sherry warmth.

The Palate: Full and composed. Waves of soft toffee and dried fruits roll across the tongue, followed by a steady pulse of gentle spice and well-integrated oak.

The Finish: Warming and long. It leaves a clean, satisfying trail of spice that lingers like the memory of a highland sunset.
